Tortiglioni are one of the many variations of macaroni, one of the oldest pasta shapes originating in Naples. Their name naturally refers to their shape and derives from the Vulgar Latin word tortillare, which literally means to twist into a spiral, featuring a characteristic design from being made on a lathe.

They are a particularly versatile yet original pasta shape, traditionally favored with hearty sauces.

Tortiglioni are excellent with rich meat ragùs. They are also good with tomato sauce or vegetable and tomato sauces. This pasta shape is also particularly well-suited for baked pasta dishes.
